Double Check.

This one’s an obvious one. When your meal is served, always confirm with the server that it was prepared gluten-free. Good restaurants will typically do this for you as a matter of course. But, when they fail, be proactive and ask — before eating. This simple step can potentially save you a catastrophe down the line.

Great point. I found this especially important at places like PF Changs where the lettuce wraps can me made gluten-free, or not, and if you don’t go that often, you don’t know that they look slightly different. If you ask “is this the gluten-free version” then they might double check and find that they brought you the wrong one. That has happened to me more than once.
